A special thanks to all the students from the 2017 Food, Culture and Communications course and the associated Comté cheese practicum, with a special tip of our hat to Comté professionals Claire Perrot (taste education), “Tas” Marmier (farmer) and Eric Chemalier (cheese ager). Every once in a while we are lucky enough to participate in an adventure that is transformative for all involved, and the Comté trip in 2017 was just such an experience.
